Appetizers – Nachos

Makes this larger and if you are like me you can make this a complete meal for like movie night.
Ingredients:

12 *8 inch) corn tortillas
Vegetable oil spray
salt
1 (16 oz) can fat-free refried beans
4 scallions, sliced thin
8 oz light cheddar cheese shredded
1/2 cup jarred jalapeno slices
2 cups fresh tomato salsa
1/2 cup greek yogurt
Directions:
1. Adjust oven racks to upper-middle and lower-middle position and preheat to 350 degrees. Line 2 rimmed blaking sheets with aluminum foil. Cut each tortilla into 4 wedges and arrange in single layer on prepared baking sheets.  Evenly spray chips with oil spray: flip chips over and spray other side. Season with salt and bake chips until golden and crisp, about 20 minutes, switching and rotating sheet about 1/2 way through. Let cool
2. Top each chip with refried beans, scallions, cheddar, and jalapenos. Bake nachos until cheese is melted about 7 minutes. Transfer to a platter; serve with salsa and yogurt.
