Green Bean, Ham and Potatoes

There is nothing better than a fresh green bean and when you add the potatoes to it you have made my day. Although this was designed to be a complete meal it was more like a side dish to me so that is what I have done with it. It is good with another pork dish.

1 medium onion, chopped
2 cloves garlic, minced
1 tablespoon butter
3 potatoes, diced
salt and pepper to taste
2 14-1/2 oz cans green beans, drained
1-1/2 cup cooked ham, cubed
2 springs fresh rosemary, chopped
1 cup water

Directions:

  1. Preheat oven to 350
  2. In a skillet over medium high heat, saute onion and garlic in butter; add potatoes, salt and pepper.
  3. Cook until potatoes are crisp.
  4. Combine potato mixture, green beans, ham and rosemary. Drizzle water over all.
  5. Cover and bake for one hour or until potatoes are tender

Serves 6
