Cook: 30 min.<\/p>\n<p>Ingredients<br \/>\n3 tablespoons olive oil<br \/>\n1\/2 pound small fresh mushrooms, sliced<br \/>\n1\/2 pound baby portabello mushrooms, quartered<br \/>\n1 large onion, sliced<br \/>\n1 garlic cloves, minced<br \/>\n1 cup chopped tomatoes<br \/>\n1\/2 cup pitted ripe olives<br \/>\n8 Eggs<br \/>\n1\/4 cup milk<br \/>\n3 tablespoons all-purpose flour<br \/>\n1 teaspoon baking powder<br \/>\n1 teaspoon salt<br \/>\n1\/2 teaspoon pepper<\/p>\n<p>Directions<br \/>\nIn a large nonstick skillet (oven proof), heat oil over medium heat. Arrange<br \/>\nmushrooms in a single layer and top with onions. Cook, without<br \/>\nstirring, for 5 minutes or until mushrooms become red-brown on one<br \/>\nside. Turn and cook about 4 minutes. Add garlic; cook 1 minute. Stir<br \/>\nin tomatoes and olives; set aside.<br \/>\nBreak eggs into a large bowl; whisk to break yolks. Add milk, flour,<br \/>\nbaking powder, salt and pepper; whisk to combine (batter may still<br \/>\nbe lumpy). Pour into skillet over vegetable mixture and stir until<br \/>\neggs and vegetables are combined. Cook, uncovered, over medium heat<br \/>\nuntil edges begin to set, about 2-3 minutes. Transfer to oven; bake<br \/>\nat 350\u00b0 for 30-40 minutes or until mixture is set and golden<br \/>\nbrown. Slide onto serving platter and cut into wedges.
