{"id":826,"date":"2014-10-21T13:38:00","date_gmt":"2014-10-21T18:38:00","guid":{"rendered":"http:\/\/deanasimmons.wordpress.com\/?p=826"},"modified":"2014-10-21T13:38:00","modified_gmt":"2014-10-21T18:38:00","slug":"chicken-potpie-casserole","status":"publish","type":"post","link":"https:\/\/southernladycooking.com\/?p=826","title":{"rendered":"Chicken Potpie Casserole"},"content":{"rendered":"<div>\n<div>Ingredients<\/div>\n<div>1-1\/2 cups sliced fresh mushrooms<\/div>\n<div>1 cup sliced fresh carrots<\/div>\n<div>1\/2 cup chopped onion<\/div>\n<div>1\/3 cup butter<\/div>\n<div>1\/3 cup all-purpose flour<\/div>\n<div>1-1\/2 cups chicken broth<\/div>\n<div>1-1\/2 cups milk<\/div>\n<div>4 cups cubed cooked chicken breast<\/div>\n<div>1 cup frozen peas<\/div>\n<div>1 jar (2 ounces) diced pimientos, drained<\/div>\n<div>1 teaspoon salt<\/div>\n<div><\/div>\n<div>BISCUIT TOPPING:<\/div>\n<div>2 cups all-purpose flour<\/div>\n<div>4 teaspoons baking powder<\/div>\n<div>2 teaspoons sugar<\/div>\n<div>1\/2 teaspoon salt<\/div>\n<div>1\/2 teaspoon cream of tartar<\/div>\n<div>1\/2 cup cold butter, cubed<\/div>\n<div>2\/3 cup milk<\/div>\n<div><\/div>\n<div>Directions<\/div>\n<div>In a large saucepan,\u00a0saut\u00e9\u00a0the mushrooms, carrots and onion in butter\u00a0until tender; sprinkle with flour. Gradually stir in broth and milk\u00a0until blended. Bring to a boil; cook and stir for 2 minutes or until\u00a0thickened. Add the chicken, peas, pimientos and salt ; heat through.\u00a0Pour into a greased shallow 2-1\/2-qt. baking dish; set aside.<\/div>\n<div>In a large bowl, combine the flour, baking powder, sugar, salt and\u00a0cream of tartar. Cut in butter until mixture resembles coarse\u00a0crumbs; stir in milk just until moistened. Turn onto a lightly\u00a0floured surface; knead 8-10 times. Pat or roll out to 1\/2-in.<\/div>\n<div>thickness. Cut with a floured 2-1\/2-in. biscuit cutter.<\/div>\n<div>Place biscuits over chicken mixture. Bake, uncovered, at 400\u00b0 for<\/div>\n<div>15-20 minutes or until biscuits are golden brown.
