{"id":806,"date":"2014-07-28T08:00:17","date_gmt":"2014-07-28T13:00:17","guid":{"rendered":"http:\/\/deanasimmons.wordpress.com\/?p=806"},"modified":"2014-07-28T08:00:17","modified_gmt":"2014-07-28T13:00:17","slug":"chicken-marsala","status":"publish","type":"post","link":"https:\/\/southernladycooking.com\/?p=806","title":{"rendered":"Chicken Marsala"},"content":{"rendered":"<p>6 Servings<br \/>\nPrep: 25 min. + marinating<br \/>\nBake: 25 min.<\/p>\n<p>Ingredients<br \/>\n6 boneless skinless chicken breast halves (4 ounces each)<br \/>\n1 cup fat-free Italian salad dressing<br \/>\n1 tablespoon all-purpose flour<br \/>\n1 teaspoon Italian seasoning<br \/>\n1\/2 teaspoon garlic powder<br \/>\n1\/4 teaspoon paprika<br \/>\n1\/4 teaspoon pepper<br \/>\n2 tablespoons Olive Oil, divided<br \/>\n1 tablespoon butter<br \/>\n1\/2 cup reduced-sodium chicken broth<br \/>\n1\/2 cup Marsala wine or 3 tablespoons unsweetened apple juice plus 5 tablespoons additional reduced-sodium chicken broth<br \/>\n1 pound sliced fresh mushrooms<br \/>\n1\/2 cup minced fresh parsley<\/p>\n<p>Directions<br \/>\nFlatten chicken to 1\/2-in. thickness. Place in a large resealable<br \/>\nplastic bag; add salad dressing. Seal bag and turn to coat;<br \/>\nrefrigerate for 8 hours or overnight.<br \/>\nDrain and discard marinade. Combine the flour, Italian seasoning,<br \/>\ngarlic powder, paprika and pepper; sprinkle over both sides of<br \/>\nchicken. In a large nonstick skillet coated with cooking spray, cook<br \/>\nchicken in 1 tablespoon oil and butter for 2 minutes on each side or<br \/>\nuntil browned. Transfer to a 13-in. x 9-in. baking dish coated with<br \/>\ncooking spray.<br \/>\nGradually add broth and wine to skillet, stirring to loosen browned<br \/>\nbits. Bring to a boil; cook and stir for 2 minutes. Strain sauce;<br \/>\nset aside. In the same skillet, cook mushrooms in remaining oil for<br \/>\n2 minutes; drain. Stir sauce into mushrooms; heat through. Pour over<br \/>\nchicken; sprinkle with parsley. Bake, uncovered, at 350\u00b0 for<br \/>\n25-30 minutes or until chicken juices run clear.
