{"id":670,"date":"2014-01-11T08:00:20","date_gmt":"2014-01-11T14:00:20","guid":{"rendered":"http:\/\/deanasimmons.wordpress.com\/?p=670"},"modified":"2014-01-11T08:00:20","modified_gmt":"2014-01-11T14:00:20","slug":"spaghetti-carbonara","status":"publish","type":"post","link":"https:\/\/southernladycooking.com\/?p=670","title":{"rendered":"Spaghetti Carbonara"},"content":{"rendered":"<p>5 Servings<br \/>\nPrep: 20 min.<br \/>\nCook: 15 min.<\/p>\n<p>Ingredients<br \/>\n8 ounces uncooked spaghetti<br \/>\n1 tablespoon cornstarch<br \/>\n4 eggs, lightly beaten<br \/>\n1 cup half-and-half cream<br \/>\n3\/4 cup chopped onion<br \/>\n2 tablespoons California Olive Ranch\u00ae Olive Oil<br \/>\n2 garlic cloves, minced<br \/>\n1 cup frozen peas<br \/>\n8 bacon strips, cooked and crumbled<br \/>\n1\/2 cup grated Parmesan cheese<br \/>\n1\/2 teaspoon salt<br \/>\n1\/4 teaspoon white pepper<br \/>\nAdditional Parmesan cheese, optional<\/p>\n<p>Directions<br \/>\nCook spaghetti according to package directions. Meanwhile, in a large<br \/>\nbowl, combine the cornstarch, eggs and cream until smooth; set<br \/>\naside.<br \/>\nIn a large skillet, saut\u00e9 onion in oil until tender. Add garlic; cook<br \/>\n1 minute longer. Gradually stir into egg mixture. Add peas to hot<br \/>\nskillet; cook and stir for 1 minute or until heated through. Pour<br \/>\negg mixture into skillet all at once, stirring constantly.<br \/>\nCook and stir over medium-low heat until mixture is just thick enough<br \/>\nto coat the back of a metal spoon with a thin film and a thermometer<br \/>\nreads 160\u00b0, about 5 minutes. Remove from the heat.<br \/>\nDrain spaghetti; toss with sauce. Sprinkle with bacon, cheese, salt<br \/>\nand pepper; toss again. Serve immediately with additional cheese if<br \/>\ndesired.
