{"id":649,"date":"2014-01-03T09:03:43","date_gmt":"2014-01-03T15:03:43","guid":{"rendered":"http:\/\/deanasimmons.wordpress.com\/?p=649"},"modified":"2014-01-03T09:03:43","modified_gmt":"2014-01-03T15:03:43","slug":"lemony-linguine-with-chicken-sugar-snap-peas-and-mint","status":"publish","type":"post","link":"https:\/\/southernladycooking.com\/?p=649","title":{"rendered":"Lemony Linguine with Chicken, Sugar Snap Peas and Mint"},"content":{"rendered":"<p><em><strong>Servings:\u00a04 (2 cup) servings<\/strong><\/em><\/p>\n<p><strong>Ingredients:<\/strong><br \/>\n8 oz. linguine<br \/>\n12 oz. sugar snap peas<br \/>\n1 lb. boneless skinless chicken breast halves, cut into 1 1\/2-inch pieces<br \/>\n1\/2 teaspoon salt<br \/>\n1\/4 teaspoon pepper<br \/>\n1 tablespoon extra-virgin olive oil<br \/>\n1\/3 cup chopped shallots<br \/>\n2 large garlic cloves, minced<br \/>\n1\/2 cup lower-sodium chicken broth<br \/>\n1\/2 cup heavy whipping cream<br \/>\n2 tablespoons chopped fresh mint<br \/>\n2 tablespoons chopped fresh chives<br \/>\n1 tablespoon lemon peel<br \/>\n1\/4 cup grated Parmesan cheese<\/p>\n<p><strong>Directions:<\/strong><br \/>\nCook pasta according to package directions, adding peas during last 3 to 5 minutes; drain.<br \/>\nMeanwhile, sprinkle chicken with salt and pepper. Heat oil in large nonstick skillet over medium-high heat until hot. Cook chicken 3 to 5 minutes or until no longer pink on the outside, stirring frequently. Add shallots and garlic; cook 1 minute, stirring constantly.<br \/>\nAdd broth and cream. Increase heat to high; bring to a boil. Boil until sauce is slightly thickened and chicken is no longer pink in center.
