{"id":639,"date":"2013-12-31T08:21:57","date_gmt":"2013-12-31T14:21:57","guid":{"rendered":"http:\/\/deanasimmons.wordpress.com\/?p=639"},"modified":"2013-12-31T08:21:57","modified_gmt":"2013-12-31T14:21:57","slug":"brandied-cranberry-short-rib-stew","status":"publish","type":"post","link":"https:\/\/southernladycooking.com\/?p=639","title":{"rendered":"Brandied Cranberry Short-Rib Stew"},"content":{"rendered":"<p>Ingredients<br \/>\n6 pounds\u00a0bone-in beef short ribs, cut into 2-in. pieces<br \/>\nAbout 2 tsp. kosher salt, divided<br \/>\nAbout 1 tsp. black pepper<br \/>\n3 tablespoons\u00a0vegetable oil, divided<br \/>\n3 pounds\u00a0kabocha squash (1 small), seeded, cut into 2-in. wedges, and peeled<br \/>\n2\u00a0medium onions, finely chopped<br \/>\n1\/3 cup\u00a0flour<br \/>\n4\u00a0garlic cloves, minced<br \/>\n3 tablespoons\u00a0Dutch-processed bittersweet cocoa powder or 1 square (1 oz.) bittersweet chocolate, chopped<br \/>\n5 cups\u00a0reduced-sodium beef broth<br \/>\n1\/2 cup\u00a0brandy<br \/>\n1\/2 cup\u00a0dried cranberries<br \/>\n2 tablespoons\u00a0minced candied ginger<br \/>\n1 tablespoon\u00a0finely shredded orange zest<br \/>\n1 1\/2 cups\u00a0fresh cranberries<\/p>\n<p>Preparation<br \/>\n1. Preheat oven to 500\u00b0. Dry short ribs on paper towels and sprinkle with 1 tsp. each salt and pepper. In a large, heavy ovenproof pot, heat 1 tbsp. oil over medium-high heat. In 4 batches, brown ribs all over. Transfer to a bowl.<br \/>\n2. Cut squash wedges crosswise, put on a baking sheet, and toss with remaining oil. Roast until caramelized, 10 minutes. Remove from oven and lower heat to 300\u00b0.<br \/>\n3. Add onions and remaining 1 tsp. salt to pot and cook over medium-high heat, stirring often, until softened, about 3 minutes. Add flour and cook, stirring, until deep golden brown, about 5 minutes. Stir in garlic and cocoa; cook 1 minute. Stir in broth and brandy. Add dried cranberries, ginger, and orange zest and bring mixture to a boil. Return short ribs to pot, cover, and bake 2 1\/2 hours.<br \/>\n4. Remove pot from oven and spoon off fat. (Or chill overnight before skimming; return to a simmer before continuing.) Stir in fresh cranberries and kabocha.
