Sometimes it is\u00a0Italian\u00a0or maybe even Southern but this is a great one for a weekend\u00a0Mexican\u00a0night. It&#8217;s great if you have left over chicken breast from the night before.\u00a0<\/strong><\/div>\n<div><\/div>\n<div><strong>Ingredients:<\/strong><\/div>\n<div><\/div>\n<div>4\u00a010-inch flour tortillas<\/div>\n<div>2 tablespoons\u00a0vegetable oil<\/div>\n<div>3\u00a0grilled chicken breast halves, chopped (about 12 oz. total)<\/div>\n<div>1\u00a015-oz. can red beans, drained and rinsed<\/div>\n<div>1 1\/2 cups\u00a0shredded Monterrey Jack<\/div>\n<div>4 cups\u00a0shredded romaine lettuce (from 1 head)<\/div>\n<div>1 1\/2 cups\u00a0tomato salsa<\/div>\n<div>1\/2 cup\u00a0low-fat sour cream<\/div>\n<div><\/div>\n<div><strong>Directions:<\/strong><\/div>\n<div><\/div>\n<div>\n<ol>\n<li>Arrange racks in top and bottom thirds of oven and preheat to 400\u00baF. Line 2 large baking sheets with foil. Place tortillas on baking sheets and brush with oil. Bake until lightly browned, 4 to 5 minutes.<\/li>\n<li>Divide chicken, beans and cheese among tortillas and return to oven. Bake until cheese has melted, 3 to 4 minutes. Remove from oven, top each portion with 1\/4 of lettuce, salsa and sour cream.
