{"id":468,"date":"2013-08-04T08:09:15","date_gmt":"2013-08-04T14:09:15","guid":{"rendered":"http:\/\/deanasimmons.wordpress.com\/?p=468"},"modified":"2013-08-04T08:09:15","modified_gmt":"2013-08-04T14:09:15","slug":"468","status":"publish","type":"post","link":"https:\/\/southernladycooking.com\/?p=468","title":{"rendered":"Linguine with Spinach-Herb Pesto"},"content":{"rendered":"<p>Ingredients:<\/p>\n<div>4 ounces\u00a0fresh baby spinach<br \/>\n1\/4 cup\u00a0slivered blanched almonds<br \/>\n1\/4 cup\u00a0fresh basil leaves<br \/>\n2 teaspoons\u00a0chopped fresh oregano<br \/>\n1 teaspoon\u00a0chopped fresh thyme<br \/>\n1\/4 teaspoon\u00a0black pepper<br \/>\n1\u00a0large garlic clove, chopped<br \/>\n2 tablespoons\u00a0organic vegetable broth<br \/>\n2 teaspoons\u00a0fresh lemon juice<br \/>\n1\/4 teaspoon\u00a0salt<br \/>\n2 tablespoons\u00a0extra-virgin olive oil<br \/>\n1 ounce\u00a0Parmigiano-Reggiano cheese, grated and divided (about 1\/4 cup)<br \/>\n8 ounces\u00a0uncooked linguine<\/div>\n<div><\/div>\n<div>Directions:<\/div>\n<div>\n<div>\n<ol>\n<li>Place spinach in a microwave-safe bowl; cover bowl with plastic wrap. Microwave at HIGH 2 minutes or until spinach wilts. Remove plastic wrap; cool slightly.<\/li>\n<li>Place spinach, almonds, and next 5 ingredients (through garlic) in a food processor. Process until chopped. Add broth, juice, and salt; pulse 5 times. With processor on, slowly pour oil through food chute; process until well blended. Scrape into a bowl; stir in half of cheese. Cover with plastic wrap.<\/li>\n<li>Cook pasta according to package directions, omitting salt and fat. Drain. Toss pasta with 1\/2 cup pesto.
