{"id":408,"date":"2013-07-14T08:11:59","date_gmt":"2013-07-14T14:11:59","guid":{"rendered":"http:\/\/deanasimmons.wordpress.com\/?p=408"},"modified":"2013-07-14T08:11:59","modified_gmt":"2013-07-14T14:11:59","slug":"408","status":"publish","type":"post","link":"https:\/\/southernladycooking.com\/?p=408","title":{"rendered":"Chicken Piccata"},"content":{"rendered":"<p>Ingredients:<\/p>\n<p>3 tablespoons all-purpose flour<br \/>\n\u00bd teaspoon salt<br \/>\n\u00bc teaspoon black pepper<br \/>\n4 boneless skinless chicken breasts (4 ounces each)<br \/>\n2 teaspoons olive oil<br \/>\n1 teaspoon butter<br \/>\n2 cloves garlic, minced<br \/>\n\u00be cup fat-free reduced-sodium chicken broth<br \/>\n1 tablespoon fresh lemon juice<br \/>\n2 tablespoons chopped Italian parsley<br \/>\n1 tablespoon drained capers<\/p>\n<p>Directions:<\/p>\n<ol>\n<li>Combine flour, salt and pepper in shallow pie plate. Reserve 1 tablespoon of flour mixture.<\/li>\n<li>Place chicken between sheets of plastic wrap. Using flat side of meat mallet or rolling pin, pound chicken to 1\/2-inch thickness. Coat chicken in flour mixture, shaking off excess.<\/li>\n<li>Heat oil and butter in large nonstick skillet over medium heat until butter is melted. Cook chicken 4 to 5 minutes per side or until no longer pink in center. Transfer to serving platter and cover loosely with foil.<\/li>\n<li>Add garlic to same skillet; cook and stir over medium heat 1 minute. Add reserved flour mixture; cook and stir 1 minute. Add broth and lemon juice; cook 2 minutes, stirring frequently, until sauce thickens.
