{"id":2137,"date":"2021-08-29T14:36:43","date_gmt":"2021-08-29T19:36:43","guid":{"rendered":"https:\/\/southernladycooking.com\/?p=2137"},"modified":"2021-08-29T14:36:43","modified_gmt":"2021-08-29T19:36:43","slug":"lemon-cream-pie","status":"publish","type":"post","link":"https:\/\/southernladycooking.com\/?p=2137","title":{"rendered":"Lemon Cream Pie"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">Crust<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>1<\/strong> crust from 1 box (14.1 oz) refrigerated Pillsbury\u2122 Pie Crusts (2 Count), softened as directed on box<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Filling<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>1<\/strong> can (14 oz) sweetened condensed milk (not evaporated)<\/li><li><strong>2<\/strong> teaspoons grated lemon peel<\/li><li><strong>1\/2<\/strong> cup fresh lemon juice (from 2 to 3 medium lemons)<\/li><li><strong>3<\/strong> cups whipping cream, divided<\/li><li><strong>4<\/strong> drops yellow food color, if desired<\/li><\/ul>\n\n\n\n<p>Steps<br><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Heat oven to 450\u00b0F. Make pie crust as directed on box for One-Crust Baked Shell using 9-inch glass pie plate. Bake 9 to 11 minutes or until lightly browned. Cool completely, about 15 minutes.<\/li><li>In medium bowl, mix condensed milk, lemon peel and lemon juice; set aside. In large bowl, beat 2 cups of the whipping cream and the food color with electric mixer on high speed until stiff.<\/li><li>Fold lemon mixture into whipped cream just until blended. Spoon into crust. Cover; refrigerate at least 3 hours until set.<\/li><li>In medium bowl, beat remaining 1 cup whipping cream with electric mixer on high speed until stiff. Spoon dollops on pie or slices of pie when serving. Store covered in refrigerator.<\/li><\/ul>\n\n\n\n<p class=\"has-large-font-size\">Options<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>You can use thawed frozen whipped topping in place of the whipping cream. Fold lemon mixture into 3 cups whipped topping, and serve additional whipped topping with the pie.<\/li><li>You can change up the flavor to make a creamy lime pie if you use fresh limes instead of lemons.<\/li><li>Top the pie with dollops of whipped cream and fresh raspberries, strawberries or blueberries.<\/li><li>For even more lemon flavor, add up to 2 teaspoons more grated lemon peel to the filling, or fold lemon peel into the whipped cream topping.<\/li><\/ul>\n","protected":false},"excerpt":{"rendered":"<p>How about a lemon pie?
