{"id":2124,"date":"2021-08-24T09:45:08","date_gmt":"2021-08-24T14:45:08","guid":{"rendered":"https:\/\/southernladycooking.com\/?p=2124"},"modified":"2021-08-24T09:45:08","modified_gmt":"2021-08-24T14:45:08","slug":"peach-pie","status":"publish","type":"post","link":"https:\/\/southernladycooking.com\/?p=2124","title":{"rendered":"Peach Pie"},"content":{"rendered":"\n<ul class=\"wp-block-list\"><li>1\/2 cup sugar<\/li><li>1\/4 cup packed brown sugar<\/li><li>4-1\/2 cups sliced peeled peaches<\/li><li>Dough for double-crust pie<\/li><li>3 tablespoons cornstarch<\/li><li>1\/4 teaspoon ground nutmeg<\/li><li>1\/4 teaspoon ground cinnamon<\/li><li>1\/8 teaspoon salt<\/li><li>2 teaspoons lemon juice<\/li><li>1 tablespoon butter<\/li><li>Vanilla ice cream, optional<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Directions<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>In a large bowl, combine sugars; add peaches and toss gently. Cover and let stand for 1 hour. On a lightly floured surface, roll one half of dough to a 1\/8-in.-thick circle; transfer to a 9-in. pie plate or iron\u00a0skillet.Trim\u00a0even with rim. Refrigerate while preparing filling.<\/li><li>Preheat oven to 400\u00b0. Drain peaches, reserving juice. In a small saucepan, combine cornstarch, nutmeg, cinnamon and salt; gradually stir in reserved juice. Bring to a boil; cook and stir until thickened, about 2 minutes. Remove from the heat; stir in lemon juice and butter. Gently fold in peaches. Pour into crust.<\/li><li>Roll remaining dough to a 1\/8-in.-thick circle; cut into 1-1\/2-in.-wide\u00a0strips. Arrange over filling in a lattice pattern. Trim and seal strips to edge of bottom crust; flute edge. Cover edge loosely with foil. Bake 40 minutes; remove foil. Bake until crust is golden brown and filling is bubbly, 10-20 minutes longer. Cool on a wire rack. If desired, serve with vanilla ice cream.<\/li><\/ul>\n\n\n\n<p>Tips:<br>You can use canned peach just make sure they are drained.
