{"id":2038,"date":"2019-10-20T08:00:27","date_gmt":"2019-10-20T13:00:27","guid":{"rendered":"http:\/\/southernladycooking.com\/?p=2038"},"modified":"2019-10-06T12:56:20","modified_gmt":"2019-10-06T17:56:20","slug":"bruschetta-with-mushrooms-and-fontina-2","status":"publish","type":"post","link":"https:\/\/southernladycooking.com\/?p=2038","title":{"rendered":"Bruschetta with Mushrooms and Fontina"},"content":{"rendered":"\n<p> YIELDS:<strong>8<\/strong><br>PREP TIME:<strong>0\u00a0hours\u00a05\u00a0mins<\/strong><br>TOTAL TIME:<strong>0\u00a0hours\u00a020\u00a0mins<\/strong><\/p>\n\n\n\n<p>I<strong>ngredients<\/strong><br>3 tbsp.\u00a0extra virgin olive oil, plus more as needed<br>10 oz.\u00a0cremini mushrooms, thinly sliced<br>2\u00a0sprigs fresh mint<br>2 tbsp.\u00a0finely chopped shallot<br>1\u00a0clove garlic, finely chopped<br>1\/2 c.\u00a0hearty red wine, such as Chianti<br>4\u00a0wide slices crusty bread, about 8 inches across<br>1 c.\u00a0shredded fontina cheese (about 4 ounces), preferably Val d\u2019Aosta<br>2\u00a0sprigs fresh thyme, plus more for garnish<br>sea salt<br>Freshly ground black pepper <\/p>\n\n\n\n<p>\n\nDirections<\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Position oven rack 6 inches from broiler heat source; heat broiler on high. Heat 2 tablespoon oil in large skillet on medium-high.<\/li><li>Add mushrooms, thyme and mint and cook, stirring occasionally, until mushrooms give off juices and begin to brown, about 6 minutes. Add shallot and garlic and cook, stirring occasionally, until tender, about 2 minutes.<\/li><li>Stir in wine and simmer until almost completely reduced, about 2 minutes. Season to taste with salt and pepper. Remove from heat; keep warm.<\/li><li>On broiler-safe baking sheet, drizzle bread with about 1 tablespoon oil. Toast bread in broiler 1 minute; turn and lightly toast other side, about 30 seconds. Divide fontina evenly over bread; broil until cheese is melted and crust is browned, about 1 minute.<\/li><li>Remove and discard herb sprigs from mushroom mixture. Transfer bread to cutting board; top with mushroom mixture. Cut each slice in half vertically to make 8 pieces; top with fresh thyme sprig, if desired.
