{"id":1987,"date":"2018-09-25T08:00:59","date_gmt":"2018-09-25T13:00:59","guid":{"rendered":"http:\/\/southernladycooking.com\/?p=1987"},"modified":"2018-09-23T14:48:58","modified_gmt":"2018-09-23T19:48:58","slug":"smoky-slow-cooked-chili","status":"publish","type":"post","link":"https:\/\/southernladycooking.com\/?p=1987","title":{"rendered":"Smoky Slow-Cooked Chili"},"content":{"rendered":"<div>Ingredients<\/div>\n<div><\/div>\n<div>1 pound\u00a0ground pork<\/div>\n<div>1 pound\u00a0boneless pork shoulder, cut into 1\/2-inch pieces<\/div>\n<div>3 cups\u00a0chopped onion<\/div>\n<div>1 3\/4 cups\u00a0chopped green bell pepper<\/div>\n<div>3\u00a0garlic cloves, minced<\/div>\n<div>3 tablespoons\u00a0tomato paste<\/div>\n<div>1 cup\u00a0lager-style beer (such as Budweiser)<\/div>\n<div>3 tablespoons\u00a0chili powder<\/div>\n<div>1 tablespoon\u00a0ground cumin<\/div>\n<div>2 teaspoons\u00a0dried oregano<\/div>\n<div>3\/4 teaspoon\u00a0freshly ground black pepper<\/div>\n<div>6\u00a0tomatillos, quartered<\/div>\n<div>2\u00a0bay leaves<\/div>\n<div>2\u00a0(14 1\/2-ounce) cans plum tomatoes, undrained and chopped<\/div>\n<div>1\u00a0(15-ounce) can no-salt-added pinto beans, drained<\/div>\n<div>1\u00a0(7 3\/4-ounce) can Mexican hot-style tomato sauce (such as El Paso)<\/div>\n<div>1\u00a0smoked ham hock (about 8 ounces)<\/div>\n<div>1 1\/2 tablespoons\u00a0sugar<\/div>\n<div>1\/2 cup\u00a0finely chopped cilantro<\/div>\n<div>1\/2 cup\u00a0finely chopped green onions<\/div>\n<div>2 ounces\u00a0crumbled queso fresco (about 1\/2 cup)<\/div>\n<div>8\u00a0lime wedges<\/div>\n<div><\/div>\n<div>Preparation<\/div>\n<div><\/div>\n<div>1. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add ground pork to pan; cook 5 minutes or until browned, stirring to slightly crumble. Drain well. Transfer pork to an electric slow cooker.<\/div>\n<div><\/div>\n<div>2. Recoat pan with cooking spray. Add pork shoulder; cook 5 minutes or until lightly browned, turning occasionally. Transfer pork to slow cooker.<\/div>\n<div><\/div>\n<div>3. Recoat pan with cooking spray. Add onion and bell pepper; saut\u00e9 8 minutes, stirring frequently. Add garlic; saut\u00e9 1 minute. Add tomato paste; cook 1 minute, stirring constantly. Stir in beer; cook 1 minute. Transfer onion mixture to slow cooker. Add chili powder, and next 9 ingredients (through ham hock) to slow cooker. Cover and cook on HIGH 5 hours or until meat is tender. Remove bay leaves and ham hock; discard. Stir in sugar. Ladle about 1 1\/3 cups chili into each of 8 bowls; top each serving with 1 tablespoon cilantro, 1 tablespoon green onions, and 1 tablespoon cheese. Serve each serving with 1 lime wedge.<\/div>\n<div><\/div>\n<div>Note: You can also cook the chili in a slow cooker on LOW for 8 hours.
