{"id":1984,"date":"2018-09-24T08:00:49","date_gmt":"2018-09-24T13:00:49","guid":{"rendered":"http:\/\/southernladycooking.com\/?p=1984"},"modified":"2018-09-23T14:40:00","modified_gmt":"2018-09-23T19:40:00","slug":"provencal-beef-daube","status":"publish","type":"post","link":"https:\/\/southernladycooking.com\/?p=1984","title":{"rendered":"Proven\u00e7al Beef Daube"},"content":{"rendered":"<div>Ingredients<\/div>\n<div><\/div>\n<div>2 pounds\u00a0boneless chuck roast, trimmed and cut into chunks<\/div>\n<div>1 tablespoon\u00a0extra-virgin olive oil<\/div>\n<div>6\u00a0garlic cloves, minced<\/div>\n<div>1\/2 cup\u00a0boiling water<\/div>\n<div>1\/2 ounce\u00a0dried porcini mushrooms<\/div>\n<div>3\/4 teaspoon\u00a0salt, divided<\/div>\n<div>Cooking spray<\/div>\n<div>1\/2 cup\u00a0red wine<\/div>\n<div>1\/4 cup\u00a0fat-free, lower-sodium beef broth<\/div>\n<div>1\/3 cup\u00a0pitted ni\u00e7oise olives<\/div>\n<div>1\/2 teaspoon\u00a0freshly ground black pepper<\/div>\n<div>2\u00a0large carrots, peeled and thinly sliced<\/div>\n<div>1\u00a0large onion, peeled and chopped<\/div>\n<div>1\u00a0celery stalk, thinly sliced<\/div>\n<div>1\u00a0(15-ounce) can whole tomatoes, drained and crushed<\/div>\n<div>1 teaspoon\u00a0whole black peppercorns<\/div>\n<div>3\u00a0flat-leaf parsley sprigs<\/div>\n<div>3\u00a0thyme sprigs<\/div>\n<div>1\u00a0bay leaf<\/div>\n<div>1\u00a0(1-inch) strip orange rind<\/div>\n<div>1 tablespoon\u00a0water<\/div>\n<div>1 teaspoon\u00a0cornstarch<\/div>\n<div>1 1\/2 tablespoons\u00a0chopped fresh flat-leaf parsley leaves<\/div>\n<div>1 1\/2 teaspoons\u00a0chopped fresh thyme<\/div>\n<div><\/div>\n<div>Preparation<\/div>\n<div><\/div>\n<div>1. Combine first 3 ingredients in a large zip-top plastic bag. Seal and marinate at room temperature 30 minutes, turning bag occasionally.<\/div>\n<div>2. Combine 1\/2 cup boiling water and mushrooms; cover and let stand 30 minutes. Drain through a sieve over a bowl, reserving mushrooms and 1\/4 cup soaking liquid. Chop mushrooms.<\/div>\n<div>3. Heat a large skillet over medium-high heat. Sprinkle beef mixture with 1\/4 teaspoon salt. Coat pan with cooking spray. Add half of beef mixture to pan; saut\u00e9 5 minutes, turning to brown on all sides. Place browned beef mixture in a 6-quart electric slow cooker. Repeat procedure with cooking spray and remaining beef mixture. Add wine and broth to skillet; bring to a boil, scraping pan to loosen browned bits. Pour wine mixture into slow cooker. Add mushrooms, reserved 1\/4 cup soaking liquid, remaining 1\/2 teaspoon salt, olives, and next 5 ingredients (through tomatoes). Place peppercorns, parsley sprigs, thyme sprigs, bay leaf, and orange rind on a double layer of cheesecloth. Gather edges of cheesecloth together; secure with twine. Add cheesecloth bundle to slow cooker. Cover and cook on LOW for 6 hours or until beef and vegetables are tender. Discard the cheesecloth bundle.<\/div>\n<div>4. Combine 1 tablespoon water and cornstarch in a small bowl, stirring until smooth. Add cornstarch mixture to slow cooker; cook 20 minutes or until slightly thick, stirring occasionally.
