{"id":1938,"date":"2018-06-27T08:00:16","date_gmt":"2018-06-27T13:00:16","guid":{"rendered":"http:\/\/southernladycooking.com\/?p=1938"},"modified":"2018-06-10T10:24:18","modified_gmt":"2018-06-10T15:24:18","slug":"salsa-verde-shrimp-with-cilantro-rice","status":"publish","type":"post","link":"https:\/\/southernladycooking.com\/?p=1938","title":{"rendered":"Salsa Verde Shrimp with Cilantro Rice"},"content":{"rendered":"<p>YIELDS:<b>4<\/b><br \/>\nPREP TIME:<b>0\u00a0hours\u00a015\u00a0mins<\/b><br \/>\nTOTAL TIME:<b>0\u00a0hours\u00a015\u00a0mins<\/b><\/p>\n<p>Ingredients<\/p>\n<p>1 c.\u00a0white rice<br \/>\n2 tbsp.\u00a0extra-virgin olive oil<br \/>\n2 tbsp.\u00a0diced shallot<br \/>\n2\u00a0cloves garlic, minced<br \/>\n1 lb.\u00a0shrimp, peeled and deveined<br \/>\nkosher salt<br \/>\nFreshly ground black pepper<br \/>\n1 c.\u00a0salsa verde<br \/>\n1\/4 c.\u00a0chopped fresh cilantro, divided<br \/>\nLime wedges, for serving<\/p>\n<p>Directions<\/p>\n<ol>\n<li>Cook rice according to package instructions.<\/li>\n<li>In a large skillet over medium-high, heat oil.\u00a0Add shallot to the skillet and season with salt and pepper. Cook until beginning to soften, about 3 minutes. Stir in garlic and cook until fragrant, about 1 minute more.<\/li>\n<li>Season shrimp with salt and pepper and cook until cooked through, 2 minutes per side. Add salsa verde and stir until warmed. Stir in about half of the cilantro.<\/li>\n<li>Before serving, fluff rice and fold in remaining cilantro.
