{"id":1712,"date":"2018-01-21T08:00:25","date_gmt":"2018-01-21T14:00:25","guid":{"rendered":"http:\/\/southernladycooking.com\/?p=1712"},"modified":"2018-01-14T13:38:07","modified_gmt":"2018-01-14T19:38:07","slug":"winter-squash-and-spinach-lasagna","status":"publish","type":"post","link":"https:\/\/southernladycooking.com\/?p=1712","title":{"rendered":"Winter Squash and Spinach Lasagna"},"content":{"rendered":"<section class=\"recipe-ingredients\">\n<h3 class=\"recipe-section-header anim-in-view\">Ingredients<\/h3>\n<div class=\"recipe-ingredients-group\">\n<ul class=\"recipe-list recipe-ingredients-list\">\n<li class=\"recipe-ingredients-item\">1 10-ounce container low sodium cottage cheese<\/li>\n<li class=\"recipe-ingredients-item\">1 10-ounce package frozen leaf spinach, thawed and squeezed of excess moisture<\/li>\n<li class=\"recipe-ingredients-item\">3 oz. part skim mozzarella, coarsely grated (about \u00be c)<\/li>\n<li class=\"recipe-ingredients-item\">4 tbsp. grated pecorino<\/li>\n<li class=\"recipe-ingredients-item\">1\/8 tsp. freshly grated nutmeg<\/li>\n<li class=\"recipe-ingredients-item\">1 10-ounce package frozen squash puree, thawed<\/li>\n<li class=\"recipe-ingredients-item\">8 no-boil lasagna noodles<\/li>\n<li class=\"recipe-ingredients-item\">1\/2 c. cr\u00e8me fraiche<\/li>\n<li class=\"recipe-ingredients-item\">1 tbsp. water<\/li>\n<li class=\"recipe-ingredients-item\">salt<\/li>\n<li class=\"recipe-ingredients-item\">pepper<\/li>\n<\/ul>\n<\/div>\n<\/section>\n<section class=\"recipe-directions\">\n<h3 class=\"recipe-section-header anim-in-view\">Directions<\/h3>\n<ol class=\"recipe-list recipe-directions-list\">\n<li class=\"recipe-directions-item\">Heat oven to 425F. In a food processor, puree the cottage cheese and spinach until smooth. Transfer to a bowl and fold in 1\/2 cup mozzarella, 2 tablespoons pecorino, nutmeg, 1\/2 teaspoon salt and 1\/4 teaspoon pepper.<\/li>\n<li class=\"recipe-directions-item\">Spread 1\/2 cup squash on the bottom of an 8-inch square baking dish. Top with 2 noodles and spread a third (about 1\/4 cup) of the remaining squash over the top. Dollop with a third (about 3\/4 cup) of the cottage cheese mixture; repeat twice.<\/li>\n<li class=\"recipe-directions-item\">Place the remaining 2 noodles on top. In a small bowl, combine the cr\u00e8me fraiche and water and spread over the top of the noodles. Sprinkle with the remaining 1\/4 cup mozzarella and 2 tablespoons pecorino.<\/li>\n<li class=\"recipe-directions-item\">Cover tightly with an oiled piece of foil (to prevent sticking) and bake for 15 minutes. Uncover and bake until the noodles are tender and the top is golden brown, 8 to 10 minutes.
