{"id":1561,"date":"2016-12-22T08:00:19","date_gmt":"2016-12-22T14:00:19","guid":{"rendered":"http:\/\/southernladycooking.com\/?p=1561"},"modified":"2016-12-18T14:44:11","modified_gmt":"2016-12-18T20:44:11","slug":"deviled-egg-macaroni-pasta-salad","status":"publish","type":"post","link":"https:\/\/southernladycooking.com\/?p=1561","title":{"rendered":"Deviled Egg Macaroni Pasta Salad"},"content":{"rendered":"<div>Ingredients<br \/>\n1\/2\u00a0cup thinly sliced\u00a0red onion<br \/>\n1\/4\u00a0cup cider vinegar<br \/>\n1\u00a0teaspoon sugar<br \/>\n8\u00a0ounces large\u00a0elbow macaroni<br \/>\n12\u00a0hard-cooked eggs<br \/>\n1\/2\u00a0cup mayonnaise<br \/>\n3\u00a0tablespoons country Dijon-style mustard<br \/>\n1\/2\u00a0teaspoon salt<br \/>\n1\/2\u00a0teaspoon smoked paprika<br \/>\n1\/4\u00a0teaspoon cracked black pepper<br \/>\n1\/2\u00a0cup chopped sweet pickle<br \/>\n1 1\/2\u00a0cups very thinly sliced celery<br \/>\nSmoked paprika and\/or pepper (optional)<\/p>\n<p>Directions<\/p><\/div>\n<p>In a small saucepan combine onion, vinegar and sugar. Bring to a simmer, stirring occasionally. Remove from heat; set aside.<br \/>\nMeanwhile, cook macaroni according to package directions. Drain and rinse well with cold water; set aside.<br \/>\nCoarsely chop one egg; set aside. Halve remaining eggs; separate yolks from whites. Coarsely chop egg whites; set aside.<br \/>\nFor dressing, place yolks in a medium bowl; mash with a fork. Add mayonnaise, mustard, and onion and vinegar mixture. Gradually stir in Tbsp. water, salt, paprika, and pepper. Set aside.<br \/>\nIn a large bowl combine the egg whites, pickles, celery, macaroni, and dressing; toss to combine. Top with reserved egg; sprinkle with additional smoked paprika and pepper.
