Cheesy Bacon and Spring Onion Muffins

Ingredients:

5 1/2 oz thick sliced bacon
7 oz cheddar cheese, cut into small pieces
1 cup fresh bread crumbs
4 spring onions or scallions, trimmed and finely chopped
3 large eggs
1/2 cup milk
handful of chives, chopped
salt and ground place pepper

Directions:

  1. Preheat the over to 375 degrees. Fry the bacon in the non-stick frying pan over medium-high heat until they are cooked but not too crispy. Then cut the bacon into bite-sized pieces with a pair of kitchen scissors (you can actually do this before frying, just remember they shrink).
  2. Place the Cheddar cheese, bread crumbs, spring onions or scallions, eggs and milk in a bowl and mix them together. Add the bacon and chives, stir them into the mixture, and season with salt and pepper.
  3. Spoon the mixture into non-stick or greased muffin tins or ramekins and bake in oven for about 25 minutes until risen and golden.
