I love chicken so the more ways i can make it the better. This is a great sandwich for those weekends you just want to be a vegetable or those busy weeknights that you just want something light.
4 submarine sandwich rolls of 1 baguette
1/3 cup caesar dressing
1/2 pkg. sandwich sliced pepperoni
3/4 lb. deli rotisserie chicken cut into 1/4 inch slices
4 slices Colby Monterey Jack cheese
4 slices tomato, cut in half
4 lettuce leaves
1/2 medium red onion, thin slice
Cut rolls horizontally in half (if using baguette, first cut into fourths). Spread dressing over cut sides of rolls
On roll bottoms, layer pepperoni, chicken, cheese, tomato, lettuce and onion. Cover with roll tops; press gently.
Cut each sandwich diagonally in half.
If you are like me you might want more than on slice of cheese.
