Buffalo Chicken Sandwich

 This is a great weeknight dinner with very little effort but packs a punch. You can serve with chips or even a green salad on the side. If you have left over just store in an air tight container for lunch the next day or store in freezer till you have one of those, I don’t want to cook days.

Ingredients:
3 1/4 lbs boneless skinless chicken breast

1 3/4 cup Buffalo wings sauce
1 cucumber
12 large sandwich buns, split
3/4 cup crumbled blue cheese (optional)
Directions:
Spray 3-1/2 to 4 quart slow cooker with cooking spray. In slow cooker place chicken, pour 1 cup of buffalo wing sauce over chicken
Cover; cook on Low for 7 to 8 hours
Rmove chicken from slow cooker; place in medium bowl and drain juices
Separate chicken with a fork and return to slow cooker increasing the setting to High for 15 minutes
Cut cucumber in half and use a vegetable peeler to make long strips of cucumber discarding the first slice.
Fill each bun with 1/2 cup chicken mixture, about 3 strips of cucumber, 1 tablespoon or remaining buffalo sauce and 1 tablespoon cheese.
Makes 12 sandwiches
