There is nothing better than a fresh green bean and when you add the potatoes to it you have made my day. Although this was designed to be a complete meal it was more like a side dish to me so that is what I have done with it. It is good with another pork dish.
1 medium onion, chopped
2 cloves garlic, minced
1 tablespoon butter
3 potatoes, diced
salt and pepper to taste
2 14-1/2 oz cans green beans, drained
1-1/2 cup cooked ham, cubed
2 springs fresh rosemary, chopped
1 cup water
Directions:
- Preheat oven to 350
- In a skillet over medium high heat, saute onion and garlic in butter; add potatoes, salt and pepper.
- Cook until potatoes are crisp.
- Combine potato mixture, green beans, ham and rosemary. Drizzle water over all.
- Cover and bake for one hour or until potatoes are tender
